Pumpkin Sage Pizza Recipe
1 sourdough pizza dough
½ cup canned pumpkin
2 garlic cloves minced
3 sage leaves thinly sliced
1 small handful of thinly sliced sage
½ pound italian sausage
½ small yellow onion diced
½ cup chicken broth
1¼ cups dry white wine
¼ cup heavy cream
1 dash hot sauce
1 dash cinnamon
1 dash nutmeg
1 bay leaves
¼ cup parmesan
½ cup mozzarella
½ cup smoked Fontana
1 tablespoon olive oil

To make the pumpkin pizza sauce, brown
and drain the sausage. Using the same pan, add the olive oil, onion
and minced garlic and simmer for a few moments. Add the sage and wine
and simmer until the wine reduces by half. Add chicken stock and pumpkin
to the sauce. Next, add the sausage and then heavy cream, followed by
the hot sauce, cinnamon, nutmeg, and 1 bay leaf. Salt and pepper to
taste.
Form the dough into the desired shape. Cook the dough (untopped) at
415°F for approximately 5-7 minutes or until slightly brown. Remove
pizza from the oven and top with pumpkin sage sauce followed by the
cheeses (in any order) and shredded sage. Cook at 415°F for 7-10
minutes or until cheese starts to brown. Remove from the oven and let
sit for 2-4 minutes.
You can spice up this pizza recipe by adding a drizzle of fresh olive
oil and another small dash of fresh sage just before serving.
